20-24 hour cold proof query
When is it safe to extend fermentation to 20-24 hours? I find i rarely have to time first thing in the am as it proofs over night, so would prefer to bake in the evening which means leaving until I get home which brings it to the 20-24 hour time frame. all the recipes stipulate…

Ok, so cold proofing is completely optional.  But it’s best practice. The golden rules of fermentation can be found here: How To Really Master Baking Sourdough Bread If you’re looking to extend the fermentation, I’d choose a lower hydration dough like my Soft & Fluffy White Sourdough Bread
