Ingredients

Scale

Sourdough Pizza Crust

300g water

50g sourdough starter (active, at peak)

10g salt

2g sugar

500g bread flour

Tomato Sauce

10g olive oil

6 oz tomato paste

15 oz tomato sauce

12 Tbsp dried oregano to taste

2 Tablespoons Italian seasoning

Cheese

12 packages of shredded mozarella, OR

23 logs of slightly dried out fresh mozarella logs

½ tsp garlic powder

½ tsp onion powder

½ Tbsp garlic salt

¼ tsp freshly ground black pepper

Instructions

  1. Mix everything together, olive oil last.
  2. Knead into a log and divide into thirds
  3. Shape each third into a ball
  4. Set aside in a covered container
  5. Proof at room temp for 8-12hrs OR 12-24hrs in the fridge
  6. After proofing, stretch into a pizza shape (use ample amount of flour to help you —the dough needs to be shaped with flour to get it to its super elastic round shape),
  7. Put sauce your pizza and bake.

✨ BAKING TEMPS AND TIMES

Varies greatly on

  • how thin or thick you make your pizza and
  • how wet your sauce is

Notes

For reference, I really like NY style pizza, so really thin like you see in the picture —and I bake mine at 500f for 5-10 min, no more than that
