300g AP Flour
30g sugar – optional
10g salt – optional
227g cold salted butter (cubed)
150g sourdough starter discard
Instructions
- In a large mixing bowl, or food processor, combine/pulse the AP flour and sugar together (if using sugar)
- Cut in salted butter until the mixture resembles coarse crumbs –like gritty sand, DO NOT overwork the dough.
- Add your sourdough starter, stirring/pulsing until everything is well combined.
- Divide the dough in half and shape each portion into a disk.
- Roll out one disk of dough until it reaches approximately 12 inches in diameter.
- Carefully drape the rolled dough over a 9-inch pie plate
- Fill the pie crust with your choice of delicious pie filling.
For the top crust
- Roll out the second disk of dough and place it over the filling, trimming any excess dough.
- Crimp the edges and create a decorative design in the center to allow steam to escape during baking.
