“Whole Wheat” Gluten-Free Sourdough Bread Recipe

Here’s my Gluten-Free Sourdough Bread recipe –it’s made from naturally gluten-free whole grains.  It is most like “whole wheat” sandwich bread, but without the gluten.

Ingredients

Scale

100g Rice Flour

150g Millet Flour

100g Buckwheat Flour

75g Tapioca Starch

75g Potato Starch

10g Salt

20g Psyllium Husk

10g Ground Flax Seed

200g Gluten-Free Starter

540g Water

  2. Can you make the artisan sourdough loaf you showed in a reel a while back? It was beautiful.

    1. Which artisan sourdough loaf are you referring to? I have made so many!

      1. I meant to add GLUTEN FREE sourdough artisan loaf. That loaf you did in a reel looked more white, and was baked in an artisan shape, not a loaf pan. I’m making your GF sandwich loaf today. . .so far everything is going just like your instructions and photos!

    1. I used rice flour as well. In fact, I ground a wild rice blend and it took around 5 days before it really bubbled up. I then fed it with brown rice flour (I ran out of the one I ground up), and it really took off! In about 8 days it was ready to use in the dough/loaf.

    I can’t wait to try this! Can I sub sorghum for the buckwheat and millet for the rice?

    Also, where can I find that oven?

    1. You can try, but remember, when you swap flours, the results wont be the same.
