Make Perfect Sourdough Bread at home with this easy beginner-friendly recipe
Beginner Sourdough Bread
- Prep Time: 4-6hrs for your sourdough starter to come to peak
- Fermentation: 6hr bulk fermentation (70F) + 24-30hr cold proof (36F)
- Cook Time: 20 min with the DO lid on + 20 min with the DO lid off
- Total Time: 36-42hrs
- Yield: 1 1x

The sourdough bread baking process can be boiled down into 7 Steps:
- FEED STARTER – 4-8hrs
- Feed your sourdough starter and use when it’s at peak
- MIXING – 5-15 min
- In a bowl, mix ingredients together thoroughly until there are no dry clumps
- FOLDING – 6hrs
- After mixing, fold/knead your dough
- 2hrs later, fold your dough again, cover and let rest
- 2hrs later, fold your dough again, cover and let rest
- SHAPING – 10 min
- Shape your sourdough dough and then place into your banneton
- COLD PROOFING – 24-30hrs
- Cover your dough and put in your fridge for min 24hrs, max 30hrs
- SCORING – 5-10 min
- Put your Dutch oven inside your oven, preheat at 485-500F,
- When it’s done preheating, take your dough out from the fridge,
- Flip it onto parchment paper and score it
- BAKING – 40 min
- Immediately bake in a Dutch Oven with the lid on for 20 min at 485-500F;
- Then bake with the Dutch Oven lid off for another 10-20 min or to your desired browning
- Cool on a cooling rack for 1-2hrs before cutting into it

2nd rise – Cold Proofing
3pm – Cold proof for 24hrs

Baking Day
2:30pm – Preheat DO in oven
3pm – Score dough
3:01pm – Bake in DO, lid on
3:20pm – Bake in DO, lid off
3:40pm – Done
